// Easy Breakfast Meals (7 days worth!)//

Thinking of what to eat in general is hard enough! (at least for me) but thinking of what to make as soon as you open your groggy, tired eyes, now that is even more of a pain.


It needs to be something that will start your day (and metabolism) off on the right path, So I have come up with 7 simple meals that are great for your time, great for your metabolism, and even great on your wallet (all the ingredients are cheap!) - Be free to write or print this out, and switch the order up each week!

  1. Monday: 1 cup oatmeal, 1 piece of fruit (I like to cut mine up and put in the oatmeal), 1 piece of toast (please substitute butter for a tiny bit of honey), 8oz of water.
  2. Tuesday: 2 cups of a healthy cereal (like a Special K or a shredded wheat type), 1 piece of fruit, 8oz of water.
  3. Wednesday: 1 egg, 1 piece of toast (honey instead of butter!), 6oz of milk, 8oz water.
  4. Thursday: 10oz of a smoothie (usually ice, a little juice and 2-3 types of fruit, a few dollops of yogurt and press blend! - make sure the lid is on though!), half of a bagel, 8oz of water.
  5. Friday: 2 eggs sauteed with 5 different veggies, wrapped in a whole wheat tortilla, 6oz of juice, 8oz water.
  6. Saturday: Mix: 1 egg, mashed banana, add 1 tsp of veggie oil. Pour onto a pan in small circles to make healthy pancakes that use no butter or flour, have no more than 7 small circles (should be smaller than your palm!), 8oz of milk, 8oz of water.
  7. Sunday: The S.E.T. Sandwich. 2 slices of whole wheat bread (toast if you like), scramble or fry one egg, then add spinach, tomato, and a dash of cheese (1 slice), 4oz of juice, 8oz water.

These are 7 easy and great meals that you can switch up each week. And yes, even though you drink milk or juice or a smoothie, you MUST drink 8oz of water. Preferably you should do this as soon as you wake up. Water wakes up your organs and metabolism and helps flush out toxins so you can start your day right (make sure to have 7 more glasses throughout the day)

Also I am so sorry for not being on here a lot, I am in the last bit of my schooling and the last bit of my chemo treatments and it has been hell! Tomorrow I will be posting a weeks worth of yummy, low calorie, breakfasts that is easy for a slow or busy morning person.

I will get used to writing this a few times a week and soon daily, I guess it helps to have followers so you have inspiration.

But I also have been so busy! My brother recently passed and today we did a 5k walk for him, I have been up since 6:00 AM! It is almost 10:00 PM now and I am very tired!

So what happens when you are on the go and only have a very quick time in the morning?

Well toast seems to be the best option, and I honestly think it is, as long as you pair it with some fruit and juice (if not than always water!)

whole wheat, whole grain, (NO WHITE OR SOURDOUGH BREAD!)

Toast it.

Options:

  • peanut butter (unfortunately I am allergic)
  • banana mashed and spread on top (my fav with honey)
  • avocado mashed on top
  • strawberry mashed on top

You honestly have endless possibilities, I would stay away from jams and butter you don’t need it. (and if  you need a butter for something sweet you may even add a thin line or two of honey - much better and healthier!)

I don’t know where any of you guys live, but I live in Northern California a block away from the beach and boy has it been WINDY!

It has been making my taste-buds go haywire!

So what do you eat on a cool, but sunny day, that is healthy?

If you are like me at all, I get cold in anything less than 70 degrees, so I sometimes want to just go to those comfort foods (grilled cheese sandwiches, fries, etc!)

Here is my Rice-Madness recipe:

(if you see stars —> * <— please look at the bottom, it is important)

Short, and faster way:

  • Start boiling some brown rice (going for healthy here! remember)
  • Option 1: cut up chicken into cubes and cook in a pan until done. Option 2: cut up tofu into cubes and lightly cook in a pan until warm.
  • Open a can of #Campbell’s #minestrone #soup**** and put in a pot on simmer. (do not add the recommended cup of water!)
  • Stir occasionally, and halfway through the rice being done add a swig of milk to the minestrone soup****.
  • Once rice is done, mix minestrone soup mix into rice, leave on simmer, or turn off and cover for 5 minutes
  • Stir in your chicken OR tofu
  • Eat and enjoy!

Now there is a longer way to cook this meal, and it basically involves not using the soup mixture. You can cut up carrots, celery, add black beans, all yourself so it is a little more healthy (less sugars and sodium). But this meal is pretty healthy in general. You can add more things (such as spinach or more of one ingredient)


Side note:


making *one cup of rice* with the *Campbell’s Minestrone Soup mix* should be a good enough meal to make two people happy

As I sit here… .

and write this I am eating pizza, I thought what a better way to start out a health blog by it not being about health per-say. I hear so many people being afraid of carbs and fat and sugar and I just end up feeling so sorry for them.
Just because you are eating healthy doesn’t mean you are being smart.
Now let me tell you a little bit about me. I am not your average person by any means. I am crazy and loud and insecure and terrified and I get discouraged and I get inspired and I feel fat and I feel thin and I feel ugly and I feel stunning. I am a real human. I am also not your average vegetarian. I will encourage you to eat meat. I will even cook you bacon if you ask nicely.
My back story: I was born and raised in Northern California (Santa Cruz to be exact) and I was raised by a hippie mother. I graduated a year early when I was 16, started working, and at 17 I moved to San Diego to attend college. I became a nurse, I took care of kids with special needs, I had a great 3 years (would move there in a heartbeat if I could again! maybe one day !) - I am a singer and musician and it is my number one passion, so I got signed to an indie label in Seattle, WA for a little under a year (it fell apart due to a band member being so heavily into drugs with a no-drug policy label) stayed in Seattle for a few months and finally moved back home to Santa Cruz, it’s been about a year and a half, since I have been back here, but for the past 8 months I have been going through treatment to get rid of this terrible Hodgkin’s Lymphoma. I am about 2 months away from being in remission and I feel great. I also have been going back to school to be certified as a personal trainer. I also have been modeling since I was 17 and I love every minute of it! (most photos aren’t work friendly ;) if ya know what I mean!)


And this leads me here, to this blog. I would love to inspire people, share with people, and help people be the all cheesy (like my pizza!) “best you - you can be!)
